All good things come in threes, so here are 3 wonderful things I recommend:

Lasagna with nuts and blue-cheese (lasagne med nötter och blåmögelost)

  • 8 plates of lasagna (preferably fresh)
  • 100 g blue-cheese
  • 100 g cottage cheese
  • 100 g  walnuts
  • 50 g shredded cheese

Bechamel sauce:

  • 1 tbsp butter
  • 1.5 tbsp flour
  • 2.5 dl milk
  • salt
  • white pepper

Cook the pasta al dente (if you are using dry plates and not fresh). Make the bechamel sauce: melt the butter in a pot at medium temperature. Add the flour and whisk it into the butter. Let fry for a minute without it getting brown. Add the milk while whisking. Increase the temperature and boil the sauce while whisking. Let boil for 2 min and then lower the temperature. Let  simmer another 5 min and watch it so that it doesn’t get burnt. Flavour the sauce with salt and pepper. Mix the blue-cheese and the cotton cheese. Place some of the mixture on each lasagna plate and roll them up. Put the rolls on a plate and pour the bechamel sauce over them. Sprinkle the chopped walnuts and the shredded cheese on top of this. Bake in the oven at 250 degrees Celsius until the sauce and the shredded cheese have become golden brown.

Chocolate fondant (4 servings) (chokladfondant)

  • 85 g white sugar
  • 150 g butter
  • 150 g dark chocolate
  • 2 tbsp cocoa powder
  • 3 egg yolks
  • 3 egg
  • 1 tbsp flour

Break the chocolate into smaller pieces and melt it together with the butter, sugar and cocoa in a bowl placed over simmering water. Whip the egg yolks and eggs until fluffy. Mix the eggs with the chocolate and add the flour while stirring. Butter up four small baking tins and bake in the oven for 10 min at 180 degrees Celsius. Let the cakes stand for a few minutes before eating them. Serve with whipped cream and berries.

And finally I’d like to recommend the ultimate store-bought pizza, namely Pirkka’s stone-oven pizza with rucola and ham. Ah, the best I’ve tasted in a long time!
